 This pizza is guaranteed to turn meatloaf haters into meatloaf lovers! Feel free to use your favorite toppings.  Plus because it is not as thick as a traditional meatloaf it cooks up in just 30 minutes! Perfect for weeknight dinners!

It would also be a sure winner for the upcoming March madness or football games next year. (please come back football I miss you!!)

Meatloaf Pizza aka Meatza
Ingredients
  • 1 Pound Left Ground Beef
  • ½ Cup Italian Bread Crumbs
  • 1 Egg
  • ⅔ Cup Pizza Sauce, Divided(I like Pappy Fred's by Del Grosso)
  • 1 Cup Mozzarella Cheese, Shredded
  • ¼ Cup Fresh Mushrooms, Thinly Sliced
  • 10-15 Slices Pepperoni
  • ¼ Cup Green Bell Pepper, Sliced
Instructions
  1. Preheat oven to 375 degrees F. Spray an 8 inch pan with non sticky cooking spray.
  2. In a medium bowl, combine beef, bread crumbs, egg, and ⅓ cup of pizza sauce. Press into prepared pan.
  3. Bake for 25 minutes. Spread with remaining pizza sauce. Top with mozzarella cheese, mushrooms, pepperoni, and green bell pepper.
  4. Bake for 5-10 minutes ,or until the cheese is melted and internal temperature is 160 degrees F.

Meatza Tips:

  1. Making a mini version of these meatloaves would also be awesome! Place into a mini muffin pan, and cook for 15-20 minutes or until a meat thermometer inserted in the center reaches 160 degrees.
  2. If you like your pizza spicy add 1/4  teaspoon of red pepper flakes.

Boneless skinless chicken breasts are a blank canvas. And they totally are! You can bake them, fry them, grill them ,you name it!

This is one of the MOST flavorful things you can do with chicken. The chicken features a tangy marinade, flavorful sauce,and spicy pico! It is a fiesta in your mouth!

I like making this on the outdoor grill, but if it is getting chilly where you are no worries! A grill pan, or even a cast iron skillet will do just fine.

Fiesta Lime Chicken (Applebees Copycat)
Ingredients
  • For the Fiesta Lime Chicken
  • 4 Boneless Skinless Chicken Breasts
  • 1 Cup Water
  • ⅓ Cup Teriyaki Sauce
  • 3 Teaspoons Garlic
  • ½ Lime, Juiced
  • 1 Tablespoon Tequila (Optional)
  • 1 Tablespoon Worcestershire sauce
  • ½ Teaspoon Salt
  • ¼ Teaspoon Ground Ginger
  • For the Sauce
  • ¼ Cup Mayonnaise
  • ¼ Cup Sour Cream
  • 2 Tablespoons Salsa
  • 1 Tablespoon Milk
  • 1 Tablespoon Cajun Seasoning
  • ¼ Teaspoon Parsley, Dried
  • ¼ Teaspoon Hot Sauce, If Desired
  • 2 Cups Colby Jack Cheese, Shredded
  • For the Pico De Gallo
  • 3 Toma Tomatoes (Seeded and Roughly Chopped)
  • ½ Red Onion (Finely Chopped)
  • 1 Jalapeno Pepper (Stems/Seeds removed, Finely Chopped)
  • 2 Tablespoons Lime Juice, Freshly Squeezed
  • Salt, To Taste
Instructions
  1. In a plastic baggie combine water, teriyaki sauce, lime juice, garlic, tequila,Worcestershire sauce, and ginger. Place chicken into baggie and refrigerate for 1-2 hours.
  2. For the sauce
  3. In a medium bowl combine mayonnaise, sour cream, salsa, milk, cajun seasoning, parsley, and hot sauce. Refrigerate until needed.
  4. For the Pico De Gallo
  5. In a medium bowl combine tomatoes, red onion, and jalapeno. Add lime juice, and salt. Mix until well combined.
  6. Lightly grease outdoor grill or grill pan. Heat to medium high. Cook chicken until internal temperature reaches 165 degrees.
  7. During the last few minutes or cooking, spread chicken with sauce and top with shredded cheese.
  8. Top chicken with pico de gallo right before serving.

Fiesta Lime Chicken Tips:

  1. Adjust the heat in this recipe by adding more or less cajun seasoning and hot sauce. I also like to enjoy with a dollop of sour cream on the top to cool things down.
  2. You can sub Greek Yogurt for the sour cream in the sauce.
  3. Be sure to throw away and unused marinade.

Skinny General Tso's Chicken: Sticky sweet and spicy chicken that is lick your plate clean good. Tastes just like your favorite deep fried takeout dish.
Ingredients
  • For the Chicken
  • 1 Pound Boneless Skinless Chicken Breasts, Cut Into Strips
  • 1 Egg + 2 Tablespoons Water, Whisked Together
  • 1 Cup Flour
  • ¼ Teaspoon Cayenne Pepper
  • Salt and Pepper, To Taste
  • For the Sauce
  • 1 Cup Buzz + Bloom Honey
  • ¼ Cup Water
  • 4 Tablespoons Soy Sauce
  • 4 Tablespoons Rice Wine Vinegar
  • 2 Tablespoons Toasted Sesame Seed Oil
  • 2 Teaspoons Paprika
  • 2 Tablespoons Hot Crushed Chilli Paste or Sauce
  • 3 Cloves Garlic, Minced
  • 3 Tablespoons Ginger, Freshly Grated
  • 2 Teaspoons Corn Starch
Instructions
  1. For the Chicken
  2. Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray. In a large bowl, combine flour, salt, pepper, and cayenne pepper.
  3. Season chicken with salt and pepper, Dip in egg mixture. Then coat in seasoned flour mixture.
  4. Place onto prepared pan, and spray with cooking spray.
  5. Bake for 20-25 minutes. Flip halfway through cooking time and spray again with non stick cooking spray.
  6. For the General Tso Sauce
  7. In a small bowl, stir soy sauce, rice wine vinegar, water, sesame oil, paprika, chili paste, salt, corn starch, garlic, and ginger together. Set aside.
  8. In a medium sauce pan or wok boil ¼ cup of water and honey. Pour in soy sauce mixture.
  9. Simmer for 2-3 minutes. Cool slightly.
  10. Toss chicken pieces and sauce until well combined.

This is one of those easy peasy recipes, you can make even on a busy weeknight. It takes less than 25 minutes from start to finish. You could even make the chicken mixture ahead of time.

The asian flavored chicken cooks up in no time. One pan, dump into lettuce leaves and you are good to go!

Copycat PF Chang's Lettuce Wraps: In the mood for PF Changs but don't want to go out? Try these copycat Lettuce Wraps: savory chicken wrapped inside crisp lettuce. This healthy recipe is perfect as an appetizer or a light supper.
Ingredients
  • 1Ttablespoon Olive Oil
  • 1 Pound Ground Chicken
  • 2 Cloves Garlic, Minced
  • 1 Sweet Onion, Diced
  • ¼ Cup Hoisin Sauce
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Rice Wine Vinegar
  • 1 Tablespoon Ginger, Freshly Grated
  • 1 Tablespoon Sriracha
  • 1 (8-ounce) Can wWole Water Chestnuts, Drained and Diced
  • 2 Green Onions, Sliced
  • Salt and Pepper, To Taste
  • 1 Head Butter Lettuce
Instructions
  1. In a large saucepan, heat olive oil over medium heat. Add ground chicken and cook until browned. Drain excess fat.
  2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger,and Sriracha. Cook for 1-2 minutes.
  3. Stir in water chestnuts and green onions. Cook for 1-2 more minutes. Season with salt and pepper to taste.
  4. Spoon chicken mixture into the center of butter lettuce leaves.

That is why I didn’t hold back on this Bacon Jalapeno Popper Mac and Cheese recipe. Go big or go home (seriously go take that crying child home, I’m trying to browse the limited edition Chips Ahoy).

Creamy cheesy pasta loaded with crispy bacon and spicy jalapenos. Your favorite bar food turned into a decadent main dish!
Ingredients
  • 1 Pound Dried Pasta (I used Campanelle)
  • 5 Tablespoons Butter, Divided
  • 2 Cups Milk
  • 8 oz. Sharp Cheddar Cheese, Shredded
  • 8 Ounces Velveeta Cheese, Cubed
  • 4 Ounces Cream Cheese, Softened
  • 1 Pound Bacon, Diced
  • 5 Jalapenos, Ribs and Seeds Removed, Sliced
  • 1 Cup Bread Crumbs
  • Salt and Pepper, To Taste
Instructions
  1. Preheat oven to 350º F. Cook pasta according to the box directions until al dente. Drain and set aside.
  2. In a large sauce pan cook bacon until crisp. Drain grease, reserving ~1 Tablespoon. Drain bacon on paper towels.
  3. Saute jalapenos for 4-5 minutes or until softened.
  4. In a large saucepan, melt 2 tablespoons butter. Stir in milk until heated.
  5. Stir in velveeta, cream cheese, and shredded cheese. Stir until cheeses are completely melted. Season with salt and pepper to taste.
  6. Fold in bacon and jalapeno. Toss with pasta until combined.
  7. Pour into a 9x13 inch pan. In a small bowl, combine remaining 3 tablespoons of butter with bread crumbs. Pour over pasta.
  8. Bake for 15-20 minutes.

I am all about food that is full of melty cheese, juicy dripping beef, and of course a good toasted roll. These turkey chorizo sliders are a little bit healthy and a little bit rock and roll!

Turkey Chorizo Sliders: Juicy burgers topped with melty cheese and creamy guacamole. This summer supper is easy and so flavorful.
Ingredients
  • 1 Pound Ground Turkey
  • ½ Pound Chorizo Sausage
  • 2 Avocados, Pit Removed
  • ¼ Red Onion
  • 1 Lime, Juiced
  • Salt and Pepper ,to Taste
  • 4 Slider Buns
  • 4 Slices Sharp Cheddar Cheese
  • 4 Slices Tomato
Instructions
  1. For the Easy Guacamole
  2. In a medium bowl, mash the avocados with the back of a fork until smooth. Stir in red onion, lime, and salt/pepper.
  3. For the Turkey Chorizo Sliders
  4. Preheat grill or large skillet.
  5. In a large bowl, combine turkey and chorizo. Form in 4 even patties.
  6. Use your thumb to make an indent in the center of the slider.
  7. Cook for 4-5 minutes per side turning only once. Burgers are done when a meat thermometer readers 165 degrees F.
  8. Place one slice of cheese on each burger. Cook over low heat until melted. If cooking in a skillet, cover with foil.
  9. Generously spread guacamole onto the bottom of half the buns. Top with tomato slice and slider patty.
