Looking for an easy way to use up peppermint candies? Consider this Peppermint Ice Cream.


 

I used our favorite Bob’s Soft Peppermint Puffs! I would suggest sticking with a soft candy or you’ll end up with a crunchy ice cream.

 

This  Ice Cream is fantastic on its own. However, it’s even better in a sundae with whipped cream and hot fudge sauce. Maybe on to of a rich fudgy chocolate brownie? YES Girl!

It would also make a super easy Christmas dessert. No need to worry about over-churned ice cream or baking with this peppermint ice cream!

Peppermint Ice Cream: Cool and creamy peppermint ice cream. The easiest holiday ice cream ever: 5 ingredients, no churning required!
Ingredients
  • 14 Ounce Can Sweetened Condensed Milk
  • 1 Cup Heavy Whipping Cream
  • ½ Cup Soft Peppermint Candies, Crushed (I used Bob's Peppermint Puffs)
  • ½ Teaspoon Peppermint Extract
  • Red Food Coloring, If Desired
Instructions
  1. In a large bowl, whip heavy cream until stiff peaks form.
  2. Fold in sweetened condensed milk , crushed peppermint candies, and peppermint extract.
  3. Add in red food coloring until you reach your desired shade of red.
  4. Pour ice cream into a loaf pan.
  5. Freeze for 3-5 hours or until hard.

Have you heard of ice cream bread? If not you’re seriously missing out! It’s literally one of the easiest desserts on the planet. In fact, it only takes 2 ingredients! Like seriously, this is the easiest recipe ever. Don’t even bother printing it out, you can remember it I promise! 🙂

Best of all you can customize it to your favorite flavor! For this Ice Cream Bread Recipe  I’ve used Butter Pecan, but honestly the possibilities are endless.

Flavors I’m dying to try soon:

1. Chocolate Chip Cookie Dough: DUH!

2. Birthday Cake: NOMNOM

3. Cookies and Cream: To die for!

It’s great fresh out of the oven with a generous amount of butter. I also love using it the next morning for the best french toast ever!

Note: My ice cream bread recipe calls for self rising flour. However, if you don’t have self rising flour you can easily make your own.  Just add 3 teaspoons of baking powder and 1 teaspoon of salt to 2 cups of all purpose flour!

Easy Butter Pecan Ice Cream Bread Recipe: Moist and tender bread that is one the easiest recipes on the planet! Can you guess the 2 common ingredients?!
Ingredients
  • Ingredients:
  • 3½ Cups Melted Butter Pecan Ice Cream (I like to microwave mine for 1 minute intervals until nearly melted)
  • 2 Cups Self-Rising Flour
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a loaf pan with non stick cooking spray.
  3. In a large mixing bowl, combine melted ice cream and flour.
  4. Evenly spread into loaf pan. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

I don’t want to sound like an old fogey, but Sesame Street these days is just ridiculous.


Apparently Cookie Monster eats vegetables and says that cookies are a “sometimes” food?!?! WHAT?!

Pfffttt. If you’re like me and believe cookies are one of the main food groups, then this ice cream is for you!

It’s loaded with 2 different kinds of cookies and I mean loaded! No 1-2 cookie pieces per bowl on this blog uh-uh!

One thing to note here is the use of store bought chocolate chip cookies. I adore store bought sweets as much as the next guy (okay probably even more, looking at you store bought cupcakes!).  However, packaged chocolate chip cookies are not my favorite. However,  they work really well here because their crunchy texture stands up to the ice cream.You may be able to substitute a very crunchy homemade one instead.

If you’re looking for a recipe I’m afraid I can’t help you because I’m a soft and chewy girl through and through!

Creamy (no churn!) vanilla ice cream stuffed full of 2 different kinds of cookies! A cookie lover's dream come true!
Ingredients
  • 2 Cup Heavy Whipping Cream
  • 1 14 oz Can Sweetened Condensed Milk
  • 2 Tablespoons of Vanilla Extract
  • ½-1 Teaspoon Blue Food Coloring
  • 20 Chocolate Sandwich Cookies (like Oreos), Roughly Chopped
  • 15 Chocolate Chip Cookies (Store bought is preferred here because of their harder texture), Roughly Chopped
Instructions
  1. Whip heavy cream, vanilla, and food coloring together until stiff peaks form. If you're like me and don't have a mixer all you need is a VERY cold bowl/whisk and some upper arm strength!
  2. Stir in sweetened condensed milk until well blended. Add additional food coloring to reach your desired shade of blue.
  3. Fold in chopped cookies sprinkling extra on top if desired.
  4. Freeze for ~6 hours.
  5. Place in freezer for at least 5 hours.

  • 3 Cups Vanilla Ice Cream
  • 1¾ Cups Whole Milk
  • ½ Teaspoon Peppermint Extract
  • Green Food Coloring
  • Whipped Cream and Cherry (if desired)
Instructions
  1. Blend the first 3 ingredients in a blender until thick and smooth. No blender?
  2. No problem just soften ice cream and mix in a bowl with a wooden spoon.

As summer comes to an end, I bid a fond adieu to ice cream.


I know plenty of people who eat ice cream all year round. However, I’m not one of them. I just can’t crave something ice cold in the winter. I go more for warm things like cobbler right out of the oven.

Even though it’s the first week in October, it’s still not “super” cold here in PA. I was trying to think of a way to merge fall and ice cream. Here is what I came up with.

Candy Corn Milkshake

Candy Corn Milkshake

Serves: 8-10 Shakes
 
Ingredients
  • 1 Quart Vanilla Ice Cream
  • 1 Quart Orange Sherbet
  • Whipped Cream (Homemade or Store bought)
  • Yellow Food Coloring
  • Sprinkles or Candy Corn to Garnish (If Desired)
Instructions
  1. Soften ice cream and sherbet for around 30 minutes. Add around ⅓ of the quart  of ice cream to a bowl (a little more is fine!). Stir in yellow food coloring until combined.
  2. Fill clear glasses around ⅓ of the way full with yellow ice cream. Return to freezer for 5-10 minutes or until set.
  3. Once set, fill cup around ⅔ of the way full with orange sherbet. Return to freezer for 5-10 minutes or until set.
  4. Fill cup nearly full using the plain vanilla ice cream. Top with whipped cream.
  5. Garnish with sprinkles or candy corn if desired.

I can’t believe how fast this summer has gone. It’s hard to believe that this Monday will be September first!


I wanted to make one more delicious ice cream treat to send off summer. Do you remember the Taco Bell Choco Taco? Here is my version of it.

Copycat Choco Taco Recipe

Yields: 4 Choco Tacos

Ingredients
  • 4 Waffle Bowls
  • 1 Pint Fudge Ripple Ice Cream (or your favorite flavor!), Softened
  • ¼ Cup Peanuts, Finely Chopped
  • 6 oz Chocolate Candiquik
Instructions
  1. Wrap waffle bowls in a dampened paper towel. Heat in the microwave for 15-20 seconds, or until soft.
  2. Gently reshape into a taco. Allow to cool/harden for 5-10 minutes.
  3. Fill tacos with ice cream. Put in freeze for 15 minutes or until hardened.
  4. Melt Candiquik in the microwave until smooth, stirring frequently.
  5. Spoon chocolate over the edges of the taco and the exposed ice cream on top. Sprinkle with peanuts.
  6. Return to freezer until ready to serve.
