I love you more than words can explain, and seriously feel like we’re internet best buds. But, sometimes I’m really glad…

that you can’t see me! Today is one of those days. The weather can’t make up its mind. My hair is frizzy, I’m wearing Cookie Monster Sweat pants, and flip flops. I’m going to sleep with the window open, fan on, leg out, and waking up freezing halfway through the night. And rinse and repeat. 

I may also be drinking Baileys hot chocolate. This stuff is going to  make you never want regular hot chocolate ever again. Smooth, creamy, and with just enough booze! Use the leftover Baileys here:

Bailey's Hot Chocolate
Ingredients
  • 3 Cups Whole Milk
  • ¼ Cup Heavy Cream
  • 1 Cup Chocolate, Roughly Chopped (I used Semi Sweet Chocolate)
  • ½ Cup Bailey's Irish Cream
  • 1 Teaspoon Vanilla Extract
  • Chocolate Syrup and Whipped Cream, If Desired For Garnish
Instructions
  1. In a large saucepan, heat 3 cups of milk with heavy cream. Stir in chopped chocolate, until completely melted.
  2. Remove from heat, and stir in vanilla and Baileys.
  3. Pour into glasses and top with whipped cream and chocolate if desired.

Bailey’s Hot Chocolate Tip: 

  1. I wouldn’t suggest using anything besides whole milk here, although you might be able to get away with 2% if that is what you are used to drinking.

  1.  Hot Chocolate dates back to the ancient Mayans who used cornmeal, chili peppers, and cocoa seeds. Spicy and sweet clearly they were ahead of their times!

  • 2 Tablespoons Good Quality Tequila
  • 1 Tablespoon Triple Sec
  • 1 Teaspoon Lime Juice, Freshly Squeezed
  • ½ Cup Cranberry Juice
  • Ice
Instructions
  1. Put ice into cocktail shaker. Add tequila, triple sec, lime juice, cranberry juice.
  2. Shake until well combined.
  3. Pour over ice.
  4. Top with fresh cranberries and lime wedges if desired.

Ingredients
  • 12 Large Strawberries, Hulled
  • 1½ Tablesppons Granulated Sugar
  • ¾ Cup Acai Green Tea, Chilled
  • 1 Cup Ice Cubes
  • ¾ Cup Coconut Milk
Instructions
  1. Place 8 strawberries, sugar, chilled tea ,and ice in a blender. Blend until smooth.
  2. Divide drink between 2 large glasses. Top with coconut milk.
  3. Garnish with remaining strawberries if desired.

Blue Curacao is a must have in my liquor cabinet. It has a mild citrus flavor, and gorgeous blue color! I love using it in my blue Hawaiians. It also goes great in these blue margaritas.

 

They are one of the easiest and mosts gorgeous summer drinks out there! Doesn’t the color remind you of tropical waters? Best of all they only need 4 ingredients (plus ice), and NO special equipment!

 

I’d suggest double or even tripling the recipes for parties, as these go down easy!

  1. In a large pitcher, combine tequila, triple sec, blue curacao, and lime juice. Stir until well combined.

It’s summertime and the living is easyyyy. I’ve been seeing this quote everywhere from the local tv news to of course Facebook. 

Since this is a self proclaimed no judgement zone, I guess I”ll tell you guys. =/

I thought that was Spongebob quote!! Apparently it’s an Ella Fitzgerald song. So yeah I need to get out more.

But I’d rather just stay home, read mystery novels, and sip on these delicious raspberry daiquiris. They’re a little more tart than a strawberry daiquiri.  If your raspberries are out of season, you can always add extra sugar to your simple syrup to taste.

Super hot? You could also make this into a frozen raspberry daiquiri cocktail. Instead of shaking in a cocktail shaker(or mason jar!), blend with ice instead!

  • 4½ Teaspoons Raspberry Simple Syrup (Recipe Below)
  • 4½ Teaspoons Lime Juice, Freshly Squeezed
  • ¼ Cup Rum
  • Ice
  • Raspberry Simple Syrup Recipe: (I used ¼ Cup of Each)
  • 1 Part Sugar
  • 1 Part Water
  • 1 Part Raspberries
Instructions
  1. For the Raspberry Simple Syrup
  2. In a small saucepan, add sugar, water, and raspberries. Cook over medium low heat until sugar is completely dissolved.
  3. Strain, and store in the refrigerator.
  4. For the Raspberry Daiquiri
  5. Pour raspberry simple syrup, lime juice, rum, and ice into a cocktail shaker (or mason jar). Shake until combined.
