I stink at decorating cupcakes, especially under pressure. If I have to bake something for family on Christmas, you can bet your last candy cane I’ll mess them up. I promise it is nearly impossible to mess these cupcakes up. Even kids can help decorate. Let’s face it there’s will probably look even better than mine! 😉

Santa Cupcakes: These easy Santa Cupcakes are so simple to make. No decorating skills required, and super fun to make with the kids!
Ingredients
  • For the Santa Cupcakes
  • 1 Box White Cake Mix
  • 3 Eggs
  • ½ Cup Vegetable Oil
  • For the Santa Cupcakes Frosting/Decorations
  • ½ Cup Butter, Softened
  • 1 Tablespoons Milk
  • 1 Teaspoon Vanilla
  • 2 Cups Powdered Sugar
  • 48 Mini Chocolate Chips
  • 10 oz Bag Mini Marshmallows
  • 24 Red Hots
  • Red Sparkling Sugar
Instructions
  1. Line cupcake pan with paper liners.
  2. Mix and bake cupcakes according to the box directions. Cool completely.
  3. In a medium bowl, cream butter and vanilla until light and fluffy.
  4. Gradually add powdered sugar a little at a time. Add milk as needed until you reach your desired consistency.
  5. Spread or pipe frosting onto cupcakes.
  6. Sprinkle red sugar on the upper third of the cupcake to resemble a hat.
  7. Cut marshmallows in half. Place one at the end of the hat to resemble a fluff ball. Also, place them along the line of the hat to resemble the fur lining. Finally, add more marshmallows to form Santa's beard.
  8. Add 2 mini chocolate chips for the eyes and a red hot for the nose.

Santa Cupcakes Shopping Tips:

  1. Feel free to use different candies if you don’t like red hots. M&Ms, candy eyes, or even raisins would look fine.
  2. You could also use a homemade cupcake base like my funfetti cupcakes.

I can’t really think of an argument against making these Apple Pie Cupcakes! They taste like apple pie in cupcake form! I made the cupcakes and apple pie filling from scratch. However, if you’re short on time (Or pans!), feel free to use shortcuts.

Apple Pie Cupcakes
Ingredients
  • For the Apple Pie Cupcakes
  • 1 Cup Milk
  • ½ Cup Butter, Softened
  • 2 Cups All Purpose Flour
  • 1½ Teaspoons Baking Powder
  • 2 Teaspoons Ground Cinnamon
  • 4 Large Eggs
  • 1¾ Cups White Sugar
  • 1 Teaspoon Vanilla
  • For the Apple Pie Filling
  • 2 Tablespoons Butter
  • 4 Medium Apples (I used Granny Smith), Peeled, Cored, and Diced
  • 2 Tablespoons White Sugar
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon Lemon Juice, Freshly Squeezed
  • ¼ Teaspoon Ground Cinnamon
  • ½ Tablespoon Cornstarch
  • 1 Tablespoon Water
  • For the Frosting
  • 4 Sticks Butter, Softened
  • 1 Tablespoon Vanilla Extract
  • 6-8 Cups Powdered Sugar
  • 5-6 Tablespoons Whole Milk
  • Pinch of Salt, To Taste
  • Caramel Sauce, If Desired
Instructions
  1. For the Apple Pie Cupcakes
  2. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
  3. In a large bowl cream butter and sugar until light and fluffy. Stir in milk, eggs, cinnamon, baking powder, and vanilla.
  4. Gradually add flour a little at a time until just combined. Do not over mix.
  5. Divide batter evenly between cupcake liners. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 5 minutes before removing to wire racks to cool completely.
  6. Once cool, cut a small circle out of the center of each cupcake.
  7. For The Apple Pie Filling
  8. In a medium saucepan melt butter over medium low heat.
  9. Add apples, sugars, lemon juice, and cinnamon. Cook for 10-12 minutes or until apples are tender.
  10. Stir in water and cornstarch, and cook until thickened.
  11. Add ~1/2 tablespoon of apple pie filling to each cupcake. Replace cupcake "lid" that you cut out earlier.
  12. For the Vanilla Buttercream
  13. Cream butter until light and fluffy. Stir in vanilla and salt.
  14. Gradually add powdered sugar a little at a time. Alternate with milk until you reach your desired consistency.
  15. Spread or pipe onto cupcakes. Drizzle with caramel sauce if desired.

1. Boxed cake mix or canned apple pie filling will work in a pinch!

2. These cupcakes would also be wonderful topped with homemade or store bought whipped cream.

thinking about doing things  ,and then never actually doing them.

Such as:

  1. Reading that mile high stack of magazine subscriptions. I’ll do it later when I have “free time”. Seriously guys I’m so behind, Taylor Swift is still dating Calvin Harris!
  2. Folding laundry: I’ll just turn the dryer on for the third time, and pretend the clothes aren’t dry. Please tell me someone else does this?! Anyone?!
  3. Making a grocery list: Haha just kidding I’ll just backtrack 2342 times and look like a moron.

One thing I thought about a lot this summer was making Strawberry  lemonade. I didn’t want to make a whole pitcher for 2 people, and I just never got around to it. (Somehow we did get around to strawberry daiquiris, frozen strawberry margaritas, and strawberry mimosas though). Priorities! But, I’m not here to make excuses I’m here to make CHANGES!

I can still enjoy the tangy lemon and sweet strawberry flavor in these Strawberry Lemonade cupcakes.

Ingredients
  • For the Lemonade Cupcakes
  • 1 Box White Cake Mix
  • ⅓ Cup Butter, Melted
  • 3 Eggs
  • Zest of 2 Lemons
  • ¼ Cup Lemon Juice, Freshly Squeezed
  • 1 Cup Sour Cream
  • ½ Cup Whole Milk
  • For the Strawberry Lemonade Frosting
  • 1 Cup Butter, Softened
  • 1 Teaspoon Vanilla Extract
  • 2 Teaspoons Lemon Juice, Freshly Squeezed
  • 4 Tablespoons Strawberry Jam
  • 3-4 Cups Powdered Sugar
Instructions
  1. For the Lemonade Cupcakes
  2. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
  3. In a large bowl, combine all cupcake ingredients. Stir until smooth and well combined.
  4. Fill cupcake liners ~2/3 of the way full. Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  5. For the Strawberry Lemonade Frosting
  6. In a large bowl, cream butter until light and fluffy. Stir in vanilla, lemon juice, and strawberry jam.
  7. Gradually add powdered sugar a little at a time. Add milk as needed to reach your desired consistency.
  8. Spread or pipe onto cupcakes. Garnish with slice strawberries, if desired.

Strawberry Lemonade Cupcakes Tip:

  1. Microwave lemons for 15-20 seconds, to make them much easier to juice.

Ingredients
  • For the Easy Nutella Cupcakes
  • 1⅔ Cups All Purpose Flour
  • 1 Cup Granulated Sugar
  • ¼ Teaspoons Baking Soda
  • 1 Teaspoon Baking Powder
  • ¾ Cup Butter, Softened
  • ½ Cup Nutella
  • 3 Egg Whites
  • 2 Teaspoons Vanilla Extract
  • ½ Cup Sour Cream
  • ½ Cup Whole Milk
  • Pinch of Salt, To Taste
  • For the Nutella Buttercream
  • 1 Cup Butter, Softened
  • 4 Cups Powdered Sugar
  • ½ Cup Nutella
  • 2 Tablespoons Whole Milk
  • 2 Teaspoons Vanilla extract
  • Salt, To Taste
  • Additional Nutella and Strawberries, If Desired
Instructions
  1. Preheat oven to 350 degrees F. Line a cupcake tin with paper liners.
  2. In a large bowl whisk flour, sugar, baking soda, baking powder, and salt together.
  3. Stir in butter, Nutella, egg whites, milk, sour cream, and vanilla until smooth.
  4. Fill cupcake liners around ¾ of the way full. Bake for 19-21 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool in pan for 3-4 minutes. Remove to wire rack to cool completely.
  6. For the Nutella Buttercream
  7. Cream butter until light and fluffy. Stir in Nutella, vanilla, and salt.
  8. Gradually add powdered sugar a little a time until just combined. Add milk as needed to reach your desired consistency.
  9. Pipe or spread Nutella buttercream onto cupcakes.
  10. If desired: heat Nutella in the microwave for 30-60 seconds. Drizzle over cupcakes. Top with strawberry slices.

Cadbury Eggs are something I avoided for so many years. My family told me I wouldn’t like them.  Plus I though they had real eggs inside (EW!). A few years ago I tried them, and LOVED them. Now I’m making up for lost time!

These cupcakes start out with a rich homemade chocolate cupcake. However, you can certainly use a chocolate cake mix if you’d prefer.

Cadbury Cupcakes: Rich chocolate cupcakes with creamy buttercream frosting decorated to look like a Cadbury Egg. The easiest and yummiest Easter Cupcake around!
Ingredients
  • For the Cadbury Cupcakes
  • 24 Mini Cadbury Creme Eggs, (12 Frozen)
  • ½ Cup Unsweetened Cocoa Powder
  • ¾ Cup All Purpose Flour
  • ½ Teaspoon Baking Soda
  • ¾ Teaspoon Baking Powder
  • ¼ Teaspoon Salt
  • 2 Eggs
  • ½ Cup White Sugar
  • ½ Cup Brown Sugar, Packed
  • ⅓ Cup Canola Oil
  • 2 Teaspoons Vanilla Extract
  • ½ Cup Buttermilk
  • For the Buttercream Frosting
  • 1 Cup Butter, Softened
  • 4 Cups Powdered Sugar
  • 3-4 Tablespoons Whole Milk
  • 2 Teaspoon Vanilla Extract
  • Pinch of Salt, To Taste
  • Yellow Food Coloring, If Desired
Instructions
  1. For the Chocolate Cadbury Cupcakes
  2. Preheat the oven to 350°F. Line a cupcake tin with paper liners.
  3. In a large bowl, combine oil, brown sugar, white sugar, eggs, and vanilla.
  4. Pour in buttermilk.
  5. Stir in cocoa powder, baking soda, baking powder, and salt. Add in flour a little a time until just combined. Do not over mix.
  6. Fill cupcake liners ~2/3 of the way full. Press a frozen Cadbury egg into the middle of each cupcake. Use a knife to cover the hole you made.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool completely.

  9. For the Buttercream Frosting
  10. Cream butter until light and fluffy. Stir in vanilla and salt.
  11. Gradually add powdered sugar a little at a time. Add milk as needed until you reach your desired consistency.
  12. Dye ~1 Cup of the buttercream frosting yellow.
  13. Spread or pipe white frosting. Top with yellow frosting. Top with a mini Cadbury Egg.

Then I added Bailey’s Buttercream to my Guinness Cupcakes. If St. Patrick’s Day isn’t the prefect excuse for this decadent little creation I don’t know what is!

  • For the Guinness Cupcakes
  • 1 Cup Guinness Beer
  • 1 Cup Butter, Softened
  • ¾ Cup Cocoa Powder
  • 2 Cups All Purpose Flour
  • 2 Cups White Sugar
  • 1½ Teaspoons Baking Soda
  • ¾ Teaspoon Salt
  • 1 Teaspoon Vanilla Extract
  • 2 Eggs
  • ⅔ Cup Sour Cream
  • For the Bailey’s Buttercream
  • ½ Cup Butter, Softened
  • 3 Cups Powdered Sugar
  • ¼-1/2 cup Bailey’s Irish Cream
  • Caramel Sauce, For Garnish if Desired
Instructions
  1. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
  2. In a medium sauce pan, melt butter. Add Guinness and simmer. Whisk in cocoa. Cool slightly.
  3. Pour into a large bowl. Stir in sugar, eggs, baking soda, vanilla, salt and sour cream.
  4. Then stir in flour a little at a time until just combined. Do not over mix.
  5. Fill cupcake liners ~2/3 of the way full. Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  6. For the Bailey's Buttercream
  7. Cream butter. Gradually add powdered sugar a little at a time. Alternate with Bailey's until you reach your desired consistency.
  8. Putting it All Together
  9. Pipe or spread cupcakes with buttercream. Drizzle with caramel sauce if desired.

  1. Don’t have sour cream? Feel free to use plain greek yogurt instead.
  2. I used caramel ice cream topping for drizzling on top of my cupcakes.
