I don’t really like gingerbread cookies. Don’t get wrong, they are ADORABLE. I’ll happily attempt to make gingerbread houses or trains. I also have a rather extensive collection of gingerbread decorations.

But, crunchy cookies and I are not really friends. When I eat a cookie, I like it to be something I can really sink my teeth in to.

These Gingerbread Whoopie Pies are amazing! They are a cakey cookie full of gingerbread flavor. They all moist, tender, and literally melt in your mouth! This recipe only makes 8 whoopie pies, so you may want to consider doubling it for the holidays!

They are such a festive treat. Consider making these version too for the summer, 4th of July, Christmas/Valentines day, or just everyday.

Gingerbread Whoopie Pies: Pillowy brown sugar and spice whoopie pies sandwiched between a thick layer of cream cheese frosting. These are perfect if you like the flavor of gingerbread without the crunch!
Ingredients
  • For the Gingerbread Whoopie Pies
  • ½ Cup Butter, Softened
  • ⅔ Cup Brown Sugar, Packed
  • 1 Egg
  • 1 Teaspoon Vanilla
  • ¼ Cup Molasses
  • 2¼ Cups All Purpose Flour
  • 1 Tablespoon Ginger, Ground
  • 1½ Teaspoons Cinnamon Ground
  • 1¼ Teaspoons Baking Soda
  • 1 Teaspoon Salt
  • 1 Teaspoon, Nutmeg ,Ground
  • ½ Teaspoon Cloves, Ground
  • 1 Cup Buttermilk
  • For the Cream Cheese Frosting
  • 12 Ounces Cream Cheese, Softened
  • ½ Cup Butter ,Softened
  • 3 Cups Powdered Sugar
  • 2 Teaspoons Vanilla
Instructions
  1. For the Gingerbread Whoopie Pies
  2. Preheat oven to 350 degrees F. Grease cookie sheet, or line with parchment paper.
  3. In a large bowl, cream butter and brown sugar. Stir in egg, vanilla, molasses, ginger, cinnamon, baking soda, salt, nutmeg, and cloves.
  4. Gradually add flour a little at a time. Alternate with buttermilk as needed.
  5. Drop batter by ¼ cup onto prepared baking sheets. You should have 16 total cakes.
  6. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool completely.
  8. For the Cream Cheese Frosting
  9. In a large bowl,cream butter and cream cheese. Stir in vanilla. Gradually add powdered sugar a little at a time until just combined.
  10. Spread or pipe frosting onto half of the whoopie pies. Top with remaining halves.

  1. Add one tablespoon of vinegar to 1 cup of milk to make buttermilk at home.

Ingredients
  • ½ Cup Peanut Butter
  • ½ Cup Butter, Softened
  • ½ Cup White Sugar,
  • ½ Cup Brown Sugar, Packed
  • 2 Teaspoons Vanilla
  • 1 Egg
  • 1⅓ Cup All Purpose Flour
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 48 Red M&M Candies
  • 96 Mini Chocolate Chips
  • Mini Twist Pretzels
  • Additional White Sugar
Instructions
  1. Preheat oven to 350. Lightly grease cookie sheets.
  2. Break pretzels into pieces to use as antlers.
  3. In a large bowl cream butter, peanut butter, white sugar, and brown sugar until light and fluffy.
  4. Add egg, salt, baking soda and vanilla.Stir until combined.
  5. Gradually add flour a little at a time until just combined. Do not over mix.
  6. Roll into balls ~1/2 inch each. Place on prepared pans.
  7. Sprinkle with sugar, and make an indentation with your thumb in the center of each cookie.
  8. Bake for 12-14 minutes or until the edges are golden brown.
  9. Immediately place an M&M candy into the indentation as the nose. Add 2 mini chocolate chips (pointed end down) as eyes.
  10. Insert 2 pretzels pieces as the antlers.
  11. If the antlers won't stick, use melted chocolate chips as "glue".

Eggnog Cookies with Eggnog Buttercream: Chewy eggnog cookies topped with a rich eggnog buttercream. Your favorite holiday beverage in cookie form!
Ingredients
  • 2¼ Cups All Purpose Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Nutmeg
  • ½ Teaspoon Cinnamon
  • 1¼ Cup White Sugar
  • ¾ Cup Butter, Softened
  • 2 Egg Yolks
  • 1 Teaspoon Vanilla
  • ½ Cup Eggnog
  • For the Eggnog Buttercream
  • 4 Cups Powdered Sugar
  • ⅓ Cup Eggnog
  • ¼ Cup Butter, Softened
  • Nutmeg, For Garnish If Desired
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Stir in eggs, eggnog,cinnamon, nutmeg, baking powder and vanilla.
  3. Gradually add vanilla a little at a time until just combined.
  4. Chill dough for 30-60 minutes.
  5. Preheat oven to 350 degrees F.
  6. Drop by rounded teaspoon onto greased cookie sheets.
  7. Bake for 15-18 minutes or until the edges are golden brown.
  8. Cool completely.
  9. For the Eggnog Buttercream
  10. In a large bowl, cream butter until light and fluffy. Gradually add powdered sugar a little at a time. Add eggnog as needed until you reach your desired consistency.
  11. Spread icing onto cookies, and sprinkle with nutmeg if desired.

You cannot just throw chocolate and marshmallows on something and call it Smores. I’m tired of seeing brownies with marshmallows or bananas with chocolate and  marshmallows called Smores something or other. Grahams are essential!!

Which is graham crackers play a major part in these Smores Whoopie Pies.  The cakey cookies are made using graham crackers crumbs.

The filling is a decadent combination of marshmallow buttercream and silky smooth chocolate ganache. The end result is even better than Smores. Promise me you’ll try them before summer is over?

  • 1¾ Cup Graham Cracker Crumbs (~15 Graham Crackers Crushed)
  • 1 Cup + 2 Tablespoons All Purpose Flour
  • 1½ Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • ½ Cup Whole Milk
  • 2 Teaspoons Vanilla Extract
  • 1 Teaspoon Vinegar
  • ½ Cup Butter, Softened
  • 1 Cup Brown Sugar,Packed
  • 2 Eggs
  • For the Marshmallow Buttercream
  • 3 Cups Powdered Sugar
  • ½ Cup Butter,Softened
  • 1 Cup Marshmallow Fluff
  • ¼ Cup Whole Milk
  • 1 Teaspoon Vanilla Extract
  • For the Chocolate Ganache
  • 14 Ounce Bag Milk Chocolate Chips
  • ¼ Cup Heavy Whipping Cream
Instructions
  1. For the Smore Whoopie PIes
  2. Preheat oven to 375 deegrees F. Line a cookie sheet with parchment paper.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Stir in eggs ,vanilla, and milk.
  5. Mix in baking soda, vinegar, baking powder, and graham cracker crumbs.
  6. Stir in flour a little at a time until just combined.
  7. Drop batter onto pan using an ice cream scoop. Bake for 8-10 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on pan for 2-3 minutes.
  8. For the Marshmallow Buttercream
  9. In a large bowl cream butter and marshmallow fluff. Stir in vanilla extract.
  10. Gradually add powdered sugar a little at a time. Add milk as needed until you reach your desired consistency.
  11. For the Chocolate Ganache
  12. In a microwave safe bowl, heat whipping cream for 45-60 seconds.
  13. Fold in chocolate chips until smooth.
  14. Spread approximately 1 tablespoon of both ganache and marshmallow buttercream onto half of the cookies. Top with remaining cookies.

Whether you call them whoopie pies or gobs like we do in Pittsburgh you can’t deny they’re delicious! These bite sized chocolate cakes with rich marshmallow buttercream are so addicting!

I’m not above buying these bad boys at my local bakery, but the homemade version is SO much better. Moist cake and creamy filling make it hard to stop at just one.

 

This recipe can easily be doubled or tripled. Best of all they don’t require a mixer or a whoopie pie pan!

  • 1 Cup Buttermilk
  • 1 Egg

  • For The Whoopie Pie Filling
  • 1 Cup Butter, Softened
  • 2 Cups Powdered Sugar
  • 2 Cups Marshmallow Creme
  • 2 Teaspoons Vanilla Extract
Instructions
  1. Preheat oven to 350 degrees F. Spray a baking sheet with non stick cooking spray or line with parchment paper.
  2. In a large bowl cream butter and sugar until light and fluffy. Add in egg, cocoa powder, baking soda, salt, and vanilla. Stir until combined.
  3. Stir in buttermilk.
  4. Add flour a little a time until just combined. Do not over mix.
  5. Spoon ~1/4 cup of batter at a time onto your prepared pan. I used an ice cream scoop. Place ~3 inches apart ,they will get bigger as they bake.
  6. Bake for 13-15 minutes or until a tooth pick inserted in the center comes out clean. Remove to a wire wrack to cool completely.
  7. For the Marshmallow Whoopie Pie Filling
  8. In a large bowl, cream butter, marshmallow creme, and vanilla until smooth.
  9. Stir in powdered sugar a little at a time until just combined.
  10. Spread the flat side of half of the whoopie pies with marshmallow filling.
  11. Top with a second whoopie pie.

  2.  twice from the Scouts selling at our local supermarket

My favorite girl scout cookies have always been tagalongs. The chocolate peanut butter combination is irresistible!

My homemade version starts with a crunchy shortbread cookies. Then they are topped with sweetened peanut butter, before being dipped in rich milk chocolate.

Tagalongs Recipe: Crunchy shortbread cookies topped with creamy peanut butter and covered in rich milk chocolate. Tastes even better than your favorite Girl Scout cookie!
Ingredients
  • For the Peanut Butter Filling
  • 1 ¼ Cup Peanut Butter
  • 1 Cup Powder Sugar
  • For the Shortbread Cookie Base
  • ¾ Pound Butter, Softened
  • 1 Cup Sugar
  • 1 Tablespoon Vanilla Extract
  • 3½ Cups All Purpose Flour
  • Pinch of Salt, To Taste
  • For the Chocolate Coating:
  • 16 Ounces of Milk Chocolate Chips
Instructions
  1. For the Peanut Butter Filling
  2. In a small mixing bowl, combine peanut butter and powdered sugar until incorporated.
  3. Line a cookie sheet with wax paper. Fill a small cookie scoop ~1/2 way full of the peanut butter mixture. Place on prepared pan.
  4. Refrigerate for 10-15 minutes or until set.
  5. Preheat the oven to 350 degrees F.
  6. For the Shortbread Cookie Base
  7. Cream butter and sugar together.
  8. Stir in vanilla and salt.
  9. Add flour a little at a time until just combined, do not over mix.
  10. Form dough into one large disc. Wrap in plastic wrap and chill for 30-45 minutes.
  11. Roll dough to ~1/2 inch thickness. Cut out circles with a small biscuit cutter.
  12. Bake on an un greased pan for 14-16 minutes or until the edges are golden brown. Cool completely.
  13. For the Milk Chocolate Coating
  14. Melt chocolate chips in the microwave for 1-2 minutes, stirring frequently until smooth.
  15. Putting It All Together
  16. Place peanut butter balls onto cookies. Spread to edges with a knife.
  17. Use a fork to dip into chocolate until covered. Allow excess to drip off.
  18. Place on a cookie sheet lined with wax paper in the fridge until set.
