Red Velvet Poke Cake: Melt in your mouth chocolate cake topped with a rich cream cheese frosting. The easiest and prettiest cake for your Valentine!
Ingredients
  • For the Red Velvet Poke Cake
  • 8 Tablespoon Butter, Softened
  • ½ Cup White Sugar
  • ¼ Cup Red Food Coloring
  • 2 Teaspoons Vanilla Extract
  • 2 Eggs
  • 2¼ Cup All purpose Flour
  • 5 Tablespoons Unsweetened Cocoa Powder (I used Hersheys)
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1 Cup Buttermilk
  • 1 Tablespoon White Vinegar
  • 1 Can (12 Ounces) Sweetened Condensed Milk
  • Sprinkles and Mini Chocolate Chips, If Desired
  • For the Cream Cheese Frosting
  • 3 Cups Powdered Sugar
  • ½ Cup Butter, Softened
  • 8 Ounces Cream Cheese, Softened
  • ¼ Teaspoon Salt
  • 2 Teaspoons Vanilla Extract
  • 2 Tablespoons Whole Milk
Instructions
  1. For the Red Velvet Poke Cake
  2. Preheat oven to 350 degrees F. Grease and dust a 9x13 inch pan with flour.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add in eggs, vanilla extract, vinegar,,red food coloring, cocoa powder, salt, and baking soda.
  4. Alternate adding buttermilk and flour a little at a time until just combined. Do not over mix.
  5. Evenly spread batter into prepared ban. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Immediately, poke holes all over top of cake using the handle of a wooden spoon. Pour sweetened condensed milk over cake. Cool completely.
  7. For the Cream Cheese Frosting
  8. Beat cream cheese until light and fluffy. Stir in salt and vanilla. Gradually add powdered sugar a little at a time. Alternate with milk as needed until you reach your desired consistency.
  9. Spread over cake. Top with sprinkles, and mini chocolate chips if desired.

  • 1 Teaspoon Cloves, Ground
  • ½ Teaspoon Nutmeg, Ground
  • Chopped Walnuts, For Garnish
  • For the Cream Cheese Frosting
  • 4 Ounces Cream Cheese, Softened
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Powdered Sugar
Instructions
  1. Preheat oven to 350 degrees F. Grease a 9x5" loaf pan.
  2. In a large bowl, cream butter and sugar until light and fluffy. Stir in vanilla,egg, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. Stir in applesauce.
  4. Gradually add flour a little at a time until just combined. Do not over mix.
  5. Evenly spread into prepared loaf pan. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool completely.
  7. For the Cream Cheese Frosting
  8. In a medium bowl, beat cream cheese and vanilla. Gradually add powdered sugar a little at a time until you reach your desired consistency.
  9. Spread frosting evenly over the gingerbread loaf. Sprinkle with chopped walnuts if desired.

d. Bring on the holiday with Santa and gingerbread men. I can’t wait till Christmasssss!

Plus the end of Thanksgiving=dessert.

Even if you love Thanksgiving dinner you’re going to want to fast forward to dessert for this Pecan Pie Cake.  It is HEAVENLY! The pecan pie cake is so moist thanks to buttermilk and 5 eggs! And the pecan pie filling is just divine! I could eat it on its own with a spoon!

Let the relatives fight over the wishbone, this is the real Thanksgiving prize!

Pecan Pie Cake
Ingredients
  • For the Pecan Pie Cake
  • 3 Cups Pecans, Roughly Chopped, Divided
  • ¾ Cup Butter, Softened
  • 2 Cups White Sugar
  • 5 Eggs, Separated
  • 1 Tablespoon Vanilla Extract
  • 1 Cup Buttermilk
  • 2 Cups Flour
  • 1½ Teaspoons Baking Soda
  • ⅓ Cup Caramel Sauce
  • ⅓ Cup Light Cream
  • For the Pecan Pie Filling
  • ½ Cup Brow Sugar, Packed
  • ⅓ Cup Cornstarch
  • ¾ Cup Dark Corn Syrup
  • 2 Egg Yolks
  • 1 Egg
  • 1½ Cups Light Cream
  • 2 Tablespoons Butter
  • 1 Teaspoon Vanilla Extract
  • For The Whipped Cream Topping
  • 2 Cups Heavy Cream
  • 3 Tablespoons Powdered Sugar
  • Additional Pecans, For Garnish
Instructions
  1. For the Pecan Pie Cake
  2. Preheat oven to 350 degrees F. Grease (3) 9" cake pans. Evenly sprinkle with 2 cups of chopped pecans.
  3. In a large bowl cream butter, and sugar until light and fluffy. Add in egg yolks ,vanilla, and baking soda.
  4. Gradually add flour a little at at a time alternating with buttermilk as needed. Mix until just combined.
  5. In a separate bowl beat egg whites until stiff peaks form. Fold egg whites and remaining pecans into cake batter.
  6. Evenly divide batter between 3 prepared pans. Bake for 18-23 minute, or until a toothpick inserted in the center comes out clean. Cool in pan for 5 minutes, before removing.
  7. In small bowl, combine caramel sauce and light cream. Brush over warm cakes twice. Cool completely.
  8. For the Pecan Pie Filling
  9. In a large saucepan combine brown sugar, cornstarch, egg yolks, egg, light cream, and corn syrup.
  10. Stir constantly over medium high heat. Bring to boil, and boil for 1 minute. Remove from heat, and stir in butter & vanilla. Cool for 20 minutes, stirring at 5 minute intervals. Cool completely.
  11. Putting It All Together
  12. Place first cake layer onto a serving plate with pecans facing up. Top with half of the pecan pie filling. Repeat. Top with final cake layer.
  13. In a large bowl whip cream and powered sugar until stiff peaks form. Spread cake with frosting, and top with additional pecans if desired.

  1. Don’t skip separating your eggs, and whipping the whites. It helps keep the cake from being too dense.
  2. No mixer, no problem! You can whip eggs or cream by hand with a whisk and some elbow grease. To make whipping cream easier be sure to use an ice cold bowl/whisk.

Ingredients
  • 1 Box White Cake Mix (& Ingredients called for the on the box)
  • 1 (14 oz.) Can Sweetened Condensed Milk
  • 2 Cups Canned Apple Pie Filling
  • Whipped Cream
  • Caramel sauce
Instructions
  1. Bake cake according to the package directions.
  2. Immediately poke holes in the cake with a wooden spoon. Pour sweetened condensed milk over cake.
  3. Spread apple pie filling over the top of the cake.
  4. Spread with cool whip. Refrigerate until ready to serve.
  5. Before serving drizzle with caramel sauce.

  • 1 Box Yellow Cake Mix, Plus Ingredients Called For on the Box
  • 1 3.5 oz. Box Instant Vanilla Pudding Mix
  • 2 Cups Whole Milk
  • 1 14 oz. Can Sweetened Condensed Milk
  • For the Chocolate Fudge Frosting
  • 1½ Sticks Butter, Softened
  • ¾ Cup Cocoa Powder
  • ½ Cup Water, Boiling
  • 1 Teaspoon Vanilla Extract
  • 5 Cups Powdered Sugar
Instructions
  1. Bake cake in a 13x9 inch pan according to the box directions.
  2. While cake is baking, whisk pudding and whole milk. Let stand for 2-3 minutes or until thickened. Then, whisk in sweetened condensed milk.
  3. When cake is done baking, poke holes in it using the handle of a wooden spoon.
  4. Pour pudding mixture evenly over the cake. Cool cake completely.
  5. For the Chocolate Fudge Frosting
  6. In a large bowl, cream butter until light and fluffy. Stir in cocoa powder.
  7. Pour in boiling water, and vanilla. Mix until well combined.
  8. Gradually add in powdered sugar a little at a time until you reach your desired consistency.
  9. Evenly spread frosting over cake. Store in the refrigerator.
