When I first heard about this  Nutella Brownies recipe I was very skeptical! However, they are some of the best brownies I’ve ever had.

 

Can you believe how easy these are? NO flour, NO brownie mix, just 2 single ingredients.

 

The secret to making the perfect Nutella brownies is to make sure you whip your eggs up. You can certainly use a stand/hand mixer if you have it. I have neither, so I used a whisk and lots of elbow grease. (My favorite secret ingredient!)

 

These are great on their own, but I like to add powdered sugar to make mine look extra fancy.

Ingredients
  • 4 Eggs
  • 1 Cup Nutella
  • Powdered Sugar, If Desired
Instructions
  1. Preheat oven to 350 F.
  2. Line an 8x8 inch baking pan with fol. Spray with non stick cooking spray.
  3. Beat eggs for 7-10 minutes or until approximately tripled in size.
  4. In a small microwave safe bowl, heat Nutella for 30-60 seconds or until warm.
  5. Stir Nutella into eggs.
  6. Evenly spread batter into prepared pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out almost clean.
  7. Dust with powdered sugar if desired.

When it comes to oreos I am all about the cream. Whether I’m licking it off, or sandwiching 2 (okay 3) cookies together I’m a cream girl through and though.

 

Double and Mega Stuff sometimes aren’t even enough for me. 😉

 

These Oreo Brownies with Oreo Cream Filling really hit the spot. The rich, creamy filling tastes just like oreo creme. Best of all it’s sandwiched between 2 chocolate cakey brownies!

However, the filling goes great on just about anything. It tastes great on graham crackers, pretzels, or just straight from the spoon. Heck I could probably put this on my shoe and it would taste good!

Oreo Brownies: Milk's favorite brownie is ready in under 20 minutes! Rich homemade oreo cream filling sandwiched between 2 cakey chocolate brownies.
Ingredients
  • For The Oreo Brownies
  • ¾ Cup Semi Sweet Chocolate Chips
  • ½ Cup Butter, Cubed
  • 1 Teaspoon Vanilla Extract
  • 2 Eggs
  • 1 Cup White Sugar
  • 1 Teaspoon Salt
  • ¾ Cup Flour
  • For the Filling
  • ½ Cup Vegetable Shortening, Softened
  • 1 Teaspoon White Sugar
  • 3½ Cups Powdered Sugar
  • 1 Teaspoon Vanilla Extract
  • 3 Tablespoons Hot Water
Instructions
  1. Preheat oven to 400° F. Line a jelly roll pan with tin foil. Spray with non stick cooking spray. Set aide.
  2. In a large microwave safe bowl melt butter and chocolate chips until smooth (~45-60 seconds).
  3. Stir in sugar, eggs, salt and vanilla.
  4. Gradually stir in flour a little at a time until just combined.
  5. Evenly spread batter into prepared pan. Bake for 8-10 minutes or until a tooth pick inserted in the center comes out clean.
  6. Cool completely.
  7. For The Oreo Filling
  8. Combine all ingredients in a large mixing bowl. Mix until smooth.
  9. For Assemble your Oreo Brownies
  10. Run a knife around the edge of the brownies. Flip over onto a flat surface. Cut in half with a knife.
  11. Evenly spread filling onto half of the brownie. Top with the other half of the brownie.

Growing up, my favorite movie snack was buttery popcorn and chocolatey Buncha Crunch®

Have you ever had them? They’re mighty addictive little buggers! Crunchy crisp rice and candy clusters covered in milk chocolate. I haven’t had them in YEARS!

 

However, I’m quickly making up for lost time with these Dark Chocolate Crunch Brownies.  The batter is a rich, fudgy dark chocolate base.  I think the dark chocolate contrasts nicely with the sweet candy,

 

The brown sugar and 2 eggs make it super moist and fudgy.  The dark chocolate crunch brownies are filled with tons of Buncha Crunch® candies too! I love that these tasty little morsels are made in the USA with with real milk chocolate and no artificial colors!

Ingredients
  • 3 Ounces Dark Chocolate, Roughly Chopped
  • ½ Cup Butter
  • 1 Cup Light Brown Sugar
  • 2 Teaspoons Vanilla Extract
  • 2 Eggs
  • ½ Cup All Purpose Flour
  • ¼ Cup Unsweetened Cocoa Powder
  • ½ Teaspoon Salt
  • 1 Cup Nestle Buncha Crunch® Candies
Instructions
  1. Preheat oven to 350 degrees F. Line an 8x8 inch pan with tin foil. Spray with non stick cooking spray and set aside.
  2. In a microwave safe bowl, melt chocolate and butter until smooth. (~30 seconds at a time, stirring frequently).
  3. Remove from heat. Stir in brown sugar,eggs and vanilla.
  4. Stir in flour cocoa powder,and salt until just combined. Do not over mix.
  5. Fold in Nestle Buncha Crunch® candies..
  6. Spread batter evenly into pan and bake for 25-30 minutes.

1.  By that time of night I’m a sleepy sloth incapable of reading and following a complex recipe

2. It’s unlikely I’ll have all the ingredients on hand.

 

When you’re craving a chocolate brownie and you have to have it right NOW, this microwave mug brownie is perfect! All the ingredients are common pantry staples. It doesn’t taste like it just came out of the microwave either. The egg yolk makes it so moist and fudgy!

 

And of course I included tons of chocolate chunks!!

Ingredients
  • 2 Tablespoons Butter
  • 2 Tablespoons White Sugar
  • 1 Tablespoon Brown Sugar, Packed
  • ½ Teaspoon Vanilla Extract
  • 1 Egg Yolk
  • 4 Tablespoons All Purpose Flour
  • 1 Tablespoon of Unsweetened Cocoa Powder
  • 4 Tablespoons Chocolate Chunks
  • Pinch of Salt, To Taste
Instructions
  1. Melt butter for 20-30 seconds in a microwave safe mug.
  2. Stir in white sugar, brown sugar, vanilla, and salt. Add in egg yolk.
  3. Stir in flour and cocoa powder. Mix under just combined, do not overmix.
  4. Fold in chocolate chunks.
  5. Cook for 45-60 seconds. Don't overcook, it will firm up as it cools!

I always hear adults talking about how busy kids are today. From sports, to music lessons, and even karate it seems like they are always headed somewhere.


However, I don’t think this is a recent phenomena. Every Tuesday I had to rush from dance class, to soccer. This inevitably resulted in having to eat dinner in the car.

My typical meal was a toaster pizza (an actual pizza made in the toaster). Oh how I miss those! I also usually grabbed either zebra cakes or cosmic brownies from the vending machine.

No matter how hard I try I can’t ever recreate that toaster pizza. But I can create an even more delicious version of Cosmic Brownies. My version is thick and ultra fudgy. They’re also made with m and ms instead of unidentified candy bits (unless you’re into that).

Copycat Cosmic Brownies: Thick, fudgy brownies smothered in silky smooth chocolate ganache, and topped with M&M candies.
Ingredients
For the Brownies:
  • ¾ Cup Unsalted Butter (1½ Sticks),
  • 2 Eggs
  • 1 Cup Granulated Sugar
  • ⅔ Cup Light Brown Sugar, Tightly Packed
  • 2 Tablespoons Milk
  • 2 Teaspoons Vanilla Extract
  • ¾ cup Un-Sweetened Natural Cocoa Powder
  • ¾ cup all-purpose flour
For the Topping:
  • 1½ Cups Semi Sweet Chocolate Chips
  • ½ Cup Heavy Cream
  • 1 Cup M&M Minis
Instructions
For the Brownies:
  1. Preheat oven to 350 degrees F. Line a 9x9 inch pan with foil. Spray with non stick spray.
  2. In a large bowl, melt butter in the microwave for 1-2 minutes.
  3. Whisk in sugars, eggs, milk, and vanilla. Then whisk in cocoa powder until smooth.
  4. Add flour gradually, until combined.
  5. Spread batter in prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  6. Heat heavy cream in a medium sauce pan. Add chocolate chips. Stir occasionally until smooth.
  7. Pour ganache over brownies. Smooth with an offset spatula.
  8. Sprinkle with M&Ms. Refrigerate until the ganache has set.

When it comes to Christmas baking/candy making I am nothing if not ambitious.

The very first year I was allowed to help with Christmas baking, my Mom sat me down with her 234243543 cookbooks and some post its.

I marked 60-70 cookies that I thought we should bake!! Because that is totally doable right?!

I am still very much an idealist when it comes to Christmas goodies. I go through my favorite cookbooks and my internet bookmarks.  Then I usually make a list of around 20 cookies. I mean surely I can back one each day in December. Right!?

Life tends to get in the way. I had planned to make buck eyes a couple days before Christmas. However, on that day our new (very first!!) dishwasher arrived. Somewhere between sugar cookies and home made Chex Mix buckeyes got forgotten! 🙁

I decided to make these Buckeye  brownies to capture the creamy peanut butter and rich chocolate I’ve been craving. These Buckeye Brownies taste just like the buckeyes you love, but with a chewy brownie layer on the bottom!

Ingredients
Brownies:
  • ⅓ cup Dutch-processed cocoa
  • ½ cup plus 2 Tablespoons boiling water
  • 2 ounces unsweetened chocolate, finely chopped
  • 4 tablespoons unsalted butter, melted
  • ½ cup plus 2 Tablespoons vegetable oil
  • 2 eggs
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 2½ cups granulated sugar
  • 1¾ cups all-purpose flour
  • ¾ teaspoon salt
Peanut Butter Filling:
  • ¾ cup creamy peanut butter
  • ½ cup unsalted butter
  • Pinch salt
  • 2¼ cups powdered sugar
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract
Glaze:
  • 1½ cups milk chocolate chips
  • 1 teaspoon Crisco
Instructions
Brownies:
  1. Heat oven to 350 degrees F. Line a 9 x 13 pan with foil. Spray with non stick cooking spray.
  2. Whisk cocoa, and boiling water together. Add unsweetened chocolate and whisk until chocolate is melted. Whisk in melted butter and oil. Add eggs, yolks,sugar and vanilla. Stir in flour and salt.
  3. Bake for 30-35 minutes until a toothpick inserted in the center comes out almost clean. Cool.
Peanut Butter filling:
  1. Mix peanut butter, butter and salt until combined. Add powdered sugar,milk, and vanilla. Spread the peanut butter mixture over the brownies.
Glaze:
  1. Melt together the chocolate chips and crisco in the microwave on 50% power for around 2 minutes (Stirring every 30 seconds).Pour the mixture over the peanut butter layer. Refrigerate for at least 30 minutes, or until set.
