I’m sure you’ve heard of Butterscotch, but what about Butter & Scotch? Butter & Scotch is a hybrid Bar & Bakery in Brooklyn. Whatttt I mean seriously, can I move in now?

The book is full of unique ideas. Other recipes I’m dying to try are:

3. Tequila King Cake

 

The recipe that immediately caught my attention was Magic buns. The original recipe calls for all spice, but I chose to use cinnamon instead. They remind me a cinnamon roll, but much flakier.

They’re not as hard as they look/sound to bake. Most of the time is spent waiting on dough that is chilling ,or rising. Sip on a coffee or latte while you wait!

Ingredients
  • For the Dough
  • 1¾ Cups Whole Milk
  • 2¼ Teaspoons Active Dry Yeast
  • 6 Cups All Purpose Flour
  • 5 Tablespoons White Sugar, Plus More For Dusting
  • 2 Eggs
  • 4 Sticks Unsalted Buter, Plus 2 Tablespoons Melted
  • 2 Tablespoons 1 Teaspoon Kosher Salt, Divided
  • 2 Teaspoons Vanilla Extract
  • For the Filling
  • 1½ Cups Light Brown Sugar, Packed
  • 1½ Tablespoons Cinnamon
  • Zest of 1 Orange
  • 1½ Tablespoons Triple Sec
  • Pinch of Salt, To Taste
Instructions
  1. For the Dough
  2. In a large microwave safe bowl, heat milk. Stir in yeast. Allow to sit for 5 minutes.
  3. Stir in eggs, 2 tablespoons of sugar, and 3 cups of flour until just combined. Cover with plastic wrap or a kitchen towel, and set aside.
  4. For the Butter Mixture
  5. In a separate large bowl, combine butter, ½ cup of flour, and 1 teaspoon of salt until just combined. Place in plastic wrap, and form into an 8x8 inch square. Refrigerate for 30 minutes.
  6. For the dough
  7. Return to yeast mixture. Add remaining 3 tablespoons sugar, 2½ cups flour, 2 tablespoons salt, vanilla, and 2 tablespoons melted butter until well combined.
  8. Knead on a floured surface for 5 minutes. Form into a square, wrap in plastic, and refrigerate for at least 30 minutes.
  9. Then roll dough into a 20x20 inch square. Lay butter mixture into the center of the 20x20 inch square. Fold inward over butter. Press edges to seal, and refrigerate for 30 minutes.
  10. Then roll out onto a lightly floured surface into a 10 x 20 inch rectangle. Fold into thirds like a business letter.
  11. Rotate ¼ of the way and continue rolling and folding.
  12. Refrigerate for 30 minutes, then roll/fold dough twice more. Refrigerate for 30 more minutes.
  13. Preheat over for 350 degrees F. Grease a muffin pan with butter, and dust with sugar.
  14. For the Filling
  15. In a medium bowl, combine brown sugar, cinnamon, orange zest, triple sec, and salt.
  16. On a lightly floured surface roll the dough out into a 15 x 20 inch rectangle. Evenly spread the filling mixture. Roll up into a 20 inch long tube.
  17. Cut into 12 equal slices. Lay swirl side up in prepared muffin tin. Loosely covered with plastic wrap and rise for 30-40 minutes or until doubled in size.
  18. Bake for 25-30 minutes or until golden brown. Then immediately, roll in additional sugar. Serve immediately.

I’ve always been a sweets girl for breakfast.  I’ll turn my nose up at eggs and bacon (or save them for brinner=breakfast for dinner). I much prefer a jolt of sugar to get me going.

On busy mornings, this is usually a muffin, doughnut, or even sugar cereal. (Why yes I do have the diet of a 5 year old!Thanks for noticing!)

However, one of my favorite weekend or holiday breakfast treats is this cake batter french toast. It’s made with sweet Hawaiian bread, cake mix, and of course tons of sprinkles. I like to top mine with glaze (and sprinkles!!). However, syrup and powdered sugar would also taste amazing!

Ingredients
  • For the Cake Batter French Toast
  • 6 Slices Kings Hawaiian Bread
  • 1¼ Cup Dry Funfetti Cake Mix
  • 4 Eggs
  • ½ Cup Whole Milk
  • 2 Teaspoons Vanilla Extract
  • ⅓ Cup Vanilla Almond Milk
  • 1 Can White Frosting, Melted
  • 1 Tablespoon Butter
  • Nonpareils or Sprinkles
  • For the Glaze
  • 2 Cups Powdered Sugar
  • 2 Tablespoons Butter, Melted
  • 2 Teaspoons Vanilla Extract
  • 3 Tablespoons Milk
Instructions
  1. For the Cake Batter French Toast
  2. In a large mixing bowl, stir eggs, milk, vanilla, almond milk, and cake mix until smooth.
  3. Heat butter in a large skillet over medium heat.
  4. Dunk bread into egg mixture on both sites until fully coated.
  5. Once skillet is hot, add one slice of french toast at a time. Cook for 2-3 minutes on each side, or until golden brown.
  6. For the Glaze
  7. In a medium bowl, melt butter in the microwave for 30-60 seconds. Stir in vanilla, and powdered sugar. Add milk until you reach your desired consistency.
  8. Pour over toast.
  9. Top with additional sprinkles if desired.

You’ve thought about eating that slice of cake for breakfast. Or if you’re me you actually ate it.

 

These cake batter pancakes give you that authentic birthday cake flavor in fluffy pancake form. They’re made with cake mix, sprinkles, and vanilla.

 

I topped mine off with lightly sweetened whipped cream. If you were feeling super naughty you could even use a bit of glaze! (Milk + Powdered sugar)

Best of all these cake batter funfetti pancakes are made without any special equipment. I made them in a regular old frying pan and mixed them using a whisk. I also whipped my cream by hand. The secret is using an ice cold bowl/whisk.

Ingredients
  • For the Cake Batter Funfetti Pancakes
  • 1½ Cups All Purpose Flour
  • 2 Teaspoons Baking Powder
  • Pinch of Salt
  • 1 Tablespoon White Sugar
  • ½ Cup Yellow Cake Mix
  • 1 Teaspoon Vanilla Extract
  • 1 Egg
  • 1½ Cup Whole Milk
  • 3 Tablespoons Butter, Melted
  • 4 Tablespoons Rainbow Sprinkles
  • For the Whipped Cream Topping
  • ¾ Cup Heavy Cream
  • 2 Tablespoons Powdered Sugar
Instructions
  1. For the Whipped Cream Topping
  2. In a medium chilled bowl, whip cream and powdered sugar with an ice cold whisk. Whisk until stiff peaks form.
  3. Store in the refrigerator.
  4. For the Cake Batter Funfetti Pancakes
  5. In a large bowl, combine flour, baking bowder, salt, sugar, and cake mix.
  6. Add vanilla, butter, and egg. Whisk in milk a little at a time. Whisk until just combined, and only small lumps remain.
  7. Fold in sprinkles.
  8. Use a cookie scoop to drop into a heated, greased skillet.
  9. Spread batter into a circle and cook for 3 minutes or until the bottoms are golden brown.
  10. Flip and cook for 1 more minute or until golden brown.
  11. Top with whipped cream and rainbow sprinkles if desired.

If anything is going to get me out of bed on these chilly winter mornings (besides my dog who has to pee) it’s these Raspberry Muffins. They’re generously covered in brown sugar streusel. Enjoy one for breakfast with a cup of coffee at home or grab one to go on your way to work.

  • For the Raspberry Muffins
  • 1 Cup All Purpose Flour
  • 1½ Teaspoons Baking Powder
  • ¼ Teaspoon Salt
  • 1 Egg
  • ½ Cup White Sugar
  • ½ Cup Sour Cream
  • ¼ Cup Vegetable Oil
  • 2 Teaspoons Vanilla Extract
  • 1 Cup Raspberries
  • For the Streusel Topping
  • ½ Cup All Purpose Flour
  • ½ Cup Brown Sugar, Packed
  • ¼ Cup Butter, Softened
Instructions
  1. For the Raspberry Muffins
  2. Preheat oven to 375 degrees F. Line a cupcake pan with paper liners.
  3. In a large bowl, combine oil, sugar, egg, sour cream, and vanilla.
  4. Stir in salt and baking powder. Gradually add flour a little at a time until just combined. Do not over mix.
  5. Evenly divide batter between muffin liners ,filling each ~2/3 of the way full.
  6. For the Brown Sugar Streusel:
  7. In a medium bowl, whisk together flour and brown sugar.
  8. Cut in butter with 2 forks until the mixture resembles coarse crumbs.
  9. Top each muffin with a few raspberries. Cover with streusel topping ~1-2 tablespoons each.
  10. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool for 5 minutes in pan. Remove to a wire wrack to cool completely.

These healthy morning glory muffins make a great breakfast on the go, and also go great with your mid morning coffee. And don’t even get me started on the cinnamon sugar streusel. Is there anything better?

Plus the carrots and whole wheat flour makes them totally healthy-ish right?! 😉

Ingredients
  • For The Morning Glory Muffins
  • ½ Cup Raisins
  • 2 Cups White Whole Wheat Flour
  • 1 Cup Brown Sugar,Packed
  • 2 Teaspoons Baking Soda
  • 2 Teaspoons Cinnamon
  • ½ Teaspoon Ginger, Ground
  • ½ Teaspoon Salt
  • 2 Cups Carrots, Grated
  • 1 Apple, Peeled, Cored, and Grated
  • ½ Cup Sweetened Shredded Coconut
  • ½ cup Finely Chopped Walnuts
  • 3 Eggs, Beaten
  • ⅔ Cup Canola Oil
  • ¼ Cup Orange Juice
  • 2 Teaspoons Vanilla Extract
  • For the Cinnamon Streusel Topping:
  • ½ Cup Flour
  • 4 Tablespoons Sugar
  • 1¾ Teaspoons Cinnamon
  • 4 Tablespoons Butter
Instructions
  1. Preheat the oven to 375 degrees F. Line a muffin tin with paper liners. Spray lightly with nonstick cooking spray.
  2. In a large bowl, whisk flour, sugar, baking soda, spices, and salt. Stir in carrots, raisins, apple, coconut, and walnuts.
  3. Stir in eggs, oil, orange juice, and vanilla extract.
  4. For the Cinnamon Streusel
  5. In a small bowl, combine flour, sugar, cinnamon,and butter. Cut butter in with 2 forks until the mixture resembles coarse crumbs.
  6. Fill muffin tin ~3/4 of the way through. Evenly divide streusel over each muffin, ~1 tablespoon each.
  7. Bake for 25-28 minutes or until a tooth pick inserted in the center comes out clean.
  8. Cool in pan for 5 minutes. Remove to a wire wrack to cool completely.

Pancakes are one of my all time favorite breakfasts.However, flipping pancakes over a hot stove before I’ve had my coffee. No thanks, I’d probably doze off!

 

However, these pumpkin spice pancake bites practically make themselves! Whip up the batter and they’ll be out of your oven in 15 minutes or less!

 

Plus who doesn’t like pumpkin spice for breakfast!?  These pumpkin spice pancake bites combine creamy sweet pumpkin with just the right amount of spice. Plus I had to throw in some chocolate chips. I mean it’s the holidays after all 😉

Ingredients
  • 1 Cup All Purpose Flour
  • 1 Teaspoon Baking Powder
  • 2 Teaspoon White Sugar
  • ½ Teaspoon Cinnamon
  • Pinch of Grated Nutmeg
  • Pinch of Salt, To Taste
  • 1 Egg
  • 3 Tablespoons Pumpkin Puree
  • 1 Teaspoon Vanilla Extract
  • ½ Cup Whole Milk
  • 2 Tablespoons Butter, Melted
  • ⅓ Cup Chocolate Chips
Instructions
  1. Preheat oven to 375 degrees F.
  2. Spray a donut hole pan with non stick cooking spray.
  3. In a large bowl, stir together egg, pumpkin puree, milk, butter, and vanilla.
  4. Stir in flour, cinnamon, nutmeg, sugar, and baking powder until just combined.
  5. Fold in chocolate chips.
  6. Fill each donut hole cavity ~2/3 of the way full.
  7. Bake for 12 minutes. Turn over, bake for 3 more minutes.
  8. Serve with butter, syrup, or powdered sugar if desired.
