Pizza is something that is really hard to mess up.

 


It doesn’t matter if it’s my favorite local joint, a national or chain, or even frozen. I will devour it! If pizza is hard to mess up, this dip is darn near impossible! If you like pizza, you are going to love my pepperoni pizza dip!

 

The pepperoni pizza dip with cream cheese has all your favorite toppings added right in!  However, feel free to adapt to fit your tastes!

Pepperoni Pizza Dip Variations:

Microwave: Cook in the microwave instead using a large microwave safe bowl. Cook for 5-6 minutes or until melty.

Crockpot:Cook in the crockpot on low for 3-4 hours.

Use your favorite toppings!  Some that we love

a. Meat Lovers: Add bacon sausage, and ham.

b. Hawaiian: Sub the pepperoni and veggies for ham and pineapple

c. Veggie: Skip the pepperoni and add mushrooms, tomatoes, and jalapenos

Ingredients
  • (1) 8 Ounce Brick Cream Cheese, Softened
  • 2 Teaspoons Italian Seasoning
  • 2 Cups Mozzarella Cheese, Shredded and Divided
  • 1 Cup Parmesan Cheese, Grated and Divided
  • 1 Cup Pizza Sauce (I like Del Grossos Pappy Freds)
  • ¼ Cup Bell Pepper, Diced
  • ¼ Cup Sweet Onion, Diced
  • 4 Ounces Sandwich Pepperoni, Sliced
  • 2 Tablespoons Blacked Olives, Sliced
Instructions
  1. Preheat oven to 350 degrees F. In a medium bowl combine Italian seasoning and cream cheese.
  2. Evenly spread into a 9 inch pie pan. Add half of the mozzarella and parmesan cheese.
  3. Top with pizza sauce, and then remaining cheese.
  4. Sprinkle with bell pepper, onion, pepperoni, and black olives.
  5. Bake for 20-25 minutes or until cheese is melted.

Lasagna Fritta aka Deep Fried Lasagna: Creamy lasagna wrapped in an ultra crunchy batter. Just when you thought lasagna couldn't get any better!
Ingredients
  • 10 Lasagna Noodles, Cooked until al Dente
  • 1 15 Ounce Container Ricotta Cheese
  • 4 Eggs, Beaten and Divided
  • 2 Cloves Garlic, Minced
  • 1 Teaspoon Italian Seasoning
  • Salt & Pepper, To Taste
  • 1 Cup Mozzarella Cheese, Shredded
  • ¼ Cup Parsley, Finely Chopped (Optional)
  • ½ Cup All Purpose Flour
  • 2 Cups Italian Breadcrumbs
  • Vegetable Oil, For Frying
  • Marinara Sauce, For Serving If Desired
Instructions
  1. Cook lasagna noodles in a pot of salted boiling water according to the package directions for al dente. Grease baking sheet, set aside.
  2. Place noodles flat onto prepared pan.
  3. In a large bowl, combine ricotta cheese, mozzarella cheese egg, Italian seasoning, and garlic. Season with salt and pepper to taste. Mix until combined.
  4. Spread ricotta mixture evenly over all 10 noodles. Fold each noodle 3-4 times until it resembles a square. Freeze for 30-45 minutes.
  5. Set up 3 small bowls containing the flour, eggs, and breadcrumbs. Dip square noodles into flour, eggs, and finally breadcrumbs.
  6. Heat around 1½ inches of oil in a deep skillet. Heat over medium heat until oil reaches ~350 degrees F. You'll know it's ready when a drop of water sizzles with you add it to the pan.
  7. Add lasagna bites 3-4 at a time into the oil. Cook for 2-3 minutes on each side. Drain on paper towels. Repeat until all are cooked.
  8. Garnish with fresh parsley, and serve with marinara sauce for dipping.

Deep Fried Lasagna Tips:

  1. Don’t skip freezing the lasagna bites. I know you want them NOW, but they will melt/explode if the cheese isn’t cold enough.
  2. Don’t crowd your skillet, work in batches until all are fried. The oil will stay hot, and your lasagna will stay crispier!

This is one of those easy peasy recipes, you can make even on a busy weeknight. It takes less than 25 minutes from start to finish. You could even make the chicken mixture ahead of time.

The asian flavored chicken cooks up in no time. One pan, dump into lettuce leaves and you are good to go!

Ingredients
  • 1Ttablespoon Olive Oil
  • 1 Pound Ground Chicken
  • 2 Cloves Garlic, Minced
  • 1 Sweet Onion, Diced
  • ¼ Cup Hoisin Sauce
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Rice Wine Vinegar
  • 1 Tablespoon Ginger, Freshly Grated
  • 1 Tablespoon Sriracha
  • 1 (8-ounce) Can wWole Water Chestnuts, Drained and Diced
  • 2 Green Onions, Sliced
  • Salt and Pepper, To Taste
  • 1 Head Butter Lettuce
Instructions
  1. In a large saucepan, heat olive oil over medium heat. Add ground chicken and cook until browned. Drain excess fat.
  2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger,and Sriracha. Cook for 1-2 minutes.
  3. Stir in water chestnuts and green onions. Cook for 1-2 more minutes. Season with salt and pepper to taste.
  4. Spoon chicken mixture into the center of butter lettuce leaves.

1. Feel free to substitute ground turkey, or even textured vegetable protein for the ground chicken.

Cream Cheese Wontons are one of our favorite Chinese takeout favorites.  Also known as Crab Rangoon or Crab puffs, they are addicting! These Crab Cream Cheese Wontons could not be easier to make at home. You only need a few common ingredients and a pot to fry them in.

The hardest part is sealing them, but my cornstarch mixture is almost foolproof!

Ingredients
  • For the Cream Cheese Wontons with Crab
  • ½ Pound Fresh Crab Meat, Shell Removed
  • 8 Ounces of Cream Cheese, Softened
  • ½ Teaspoon Worcestershire Sauce
  • ½ Teaspoon Low Sodium Soy Sauce
  • ½ Teaspoon Grated Ginger
  • ½ Teaspoon Lemon Juice Freshly Squeezed
  • 2 Green Onions,Sliced Thin
  • Salt and Pepper, To Taste
  • 24 Wonton Skins
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Water
  • 1 Egg Yolk
  • Oil,For Frying
  • For the Sweet an Sour Crab Rangoon Dipping Sauce
  • 5 Tablespoons White Sugar
  • 1 Tablespoon Honey
  • ½ Teaspoon Salt
  • 4 Tablespoon Vinegar
  • 3 Tablespoons Low Sodium Soy Sauce
  • 2 Tablespoons White Wine Vinegar
  • 3 Tablespoons Ketchup
  • 2 Tablespoons Vegetable Oil
  • 1 Clove Garlic, Minced
  • 1 Tablespoon Cornstarch Dissolved in 3 Tablespoons of Water
  • 1 Tablespoon Sesame Oil
  • ½ Cup Water
Instructions
  1. For the Crab Cream Cheese Wontons
  2. In a large bowl, combine crab and cream cheese.
  3. Stir in Worcestershire sauce, soy sauce, ginger, lemon juice, and green onion. Season with salt and pepper to taste.
  4. In a small bowl combine cornstarch and water. Add the egg yolk. Set aside, we'll use this to seal up our wontons in a bit.
  5. Fill each wonton wrapped with ~1 teaspoon of filling. Coat the edges of the wonton with the sealing mixture. Then fold over to create a triangle.
  6. Press to seal, and then crimp the edges using a fork.
  7. In a large pot heat oil to 350 degrees F. Fry in batches for 3-4 minutes or until crispy.
  8. Drain on paper towels.
  9. For the Cream Cheese Rangoon Dipping Sauce
  10. Im a large bowl, combine sugar, salt, vinegars, soy sauce, and ketchup. Stir until sugar is dissolved.
  11. In a small bowl, combine the cornstarch/water mixture with the sesame oil. Set aside.
  12. In a medium skillet heat vegetable oil. Cook garlic for 1-2 minutes.
  13. Slowly pour in your prepared sauce. Stir frequently until it comes to a boil. Reduce to low and add in cornstarch mixture until thickened.
  14. Pour in water. Remove from heat.

I can also be found dipping my quesadilla or burrito in it. I’ve even been known to eat it by the spoonful, (usually followed by regret and chased with lots of water).

This  chile con queso is a little different than your average recipe. It doesn’t contain any processed cheese like Velveeta. I love Velveeta as much as the next gal, but the texture/flavor of this from scratch version version is so much better!

Chile Con Queso Dip

Chile Con Queso Dip: Melty gooey cheese dip that is perfect for Taco Tuesday! 100% from scratch, no Velveeta or other processed cheese.
Ingredients
  • ½ Sweet Onion, Finely Diced
  • 4 Cloves Garlic, Minced
  • 3 Serrano Peppers, Finely Diced
  • 3 Jalapeno Peppers Finely Diced
  • 2 Tablespoons Butter
  • 2 Tablespoons All Purpose Flour
  • 1 Cup Whole Milk
  • 6 Cups Shredded Cheese (I used 3 Cups Longhorn Cheddar and 3 Cups of Monterrey Jack)
  • ½ Cup Cilantro, Chopped
  • 2 Plum Tomatoes, Peeled and Diced
  • ½ Cup Sour Cream
  • Salt, To Taste
Instructions
  1. In a large sauce pan melt butter over medium heat. Add in onion, and peppers. Cook for 5-7 minutes or until softened.
  2. Add garlic and cook for another minute.
  3. Whisk in flour and cook for around 30 seconds.
  4. Pour in milk and cook for 5 minutes whisking constantly until thickened.
  5. Stir in tomatoes and cilantro.
  6. Turn the heat down to low. Add cheese ¼ a cup at a time. Let cheese melt before stirring in more. Repeat until all cheese is used up.
  7. Stir in sour cream and salt to taste.

  1. Feel free to use shredded cheese. However, I used Longhorn and Monterrey Jack from my deli in block form. Shred it just before adding to the recipe.

I can never get enough nachos. Once I start, that plate is doomed! I think what makes them so appealing to me is the combination of flavors/textures.

 

These Irish Nachos (aka nachos made with potatoes are something else entirely). Crispy potatoes, gooey cheese, crunchy bacon, and creamy sour cream. I’m in heaven!

 

These Irish nachos make a great appetizer/side dish IF you can share. Personally in our house we each grab some on a plate.

I went with traditional loaded baked potato toppings like bacon, cheese, and green onion. However, feel free to use whatever toppings you/your family prefers.

Ingredients
  • 3-4 Idaho Potatoes (Scrubbed Clean and Sliced ~1/4 Inch Thick)
  • 2 Tablespoons Olive Oil
  • ½ Teaspoon Dried Rosemary (Crushed)
  • ½ Teaspoon Dried Thyme (Crushed)
  • Salt and Pepper, To Taste
  • 1 Cup Sharp Cheddar Cheese, Finely Shredded
  • 6 Slices Bacon, Cooked Crisp and Finely Chopped
  • 2 Green Onions, Minced
  • Salsa and Sour Cream, If Desired
Instructions
  1. Preheat oven to 450 degrees F.
  2. In a large bowl combine potatoes, olive oil, rosemary, thyme, salt, and pepper. Stir until coated.
  3. Place potatoes in a single layer on a cookie sheet. Bake for 20 minutes. Flip over. Bake for another 20 minutes.
  4. Place cooked potatoes in a large oven safe skillet. Top with cheese and bacon. Return to over for 3-5 minutes or until cheese is melted.
  5. Sprinkle with green onions. Serve with sour cream and salsa if desired.

Irish Nachos Shopping tips:

  1. I like making my bacon in the microwave so I don’t have to mess around with frying it. Simply cover with a paper towel and cook for 3-4 minutes or until crisp.
