It is not an easy 10 minute dessert, but it is SO SO worth it. Plus what else have you got to do when you’re cooped up inside?

 

If you are short on time or just not into making things from scratch you can always use short cuts. (i.e. Store bought Graham Cracker Crust to replace the blondies, caramel ice cream topping, or frozen baked apples.

Ingredients
  • For The Apple Spice Blondie Crust
  • ¾ Cup Butter, Melted
  • 1½ Cups Brown Sugar
  • 3 Tsp Vanilla
  • 2 Eggs
  • 1½ Cups Flour
  • ½ Tsp Cinnamon
  • ¾ Tsp Apple Pie Spice
  • ¾ Tsp Baking Powder
  • ¼ Tsp Baking Soda
  • ¼ Tsp Salt
  • ½ Apple, Finely Chopped
  • For The Homemade Caramel Sauce
  • ¼ Cup (1/2 Stick) Butter
  • ½ Cup Brown Sugar
  • 5 Tablespoons Heavy Cream
  • For The Caramel Cheesecake
  • 16 Oz. Cream Cheese, Softened
  • ½ Cup White Sugar
  • ½ Cup Brown Sugar
  • ¾ Cup Caramel Sauce (See recipe below)
  • ½ Tsp Apple Pie Spice
  • 4 Oz Extra Creamy Cool Whip
  • For The Cinnamon Apples
  • 1½ Apples, Thinly Sliced
  • 2 Tsp Lemon Juice
  • 1 Tsp Cinnamon
  • 4 Tbsp Brown Sugar
  • 1 Tbsp Butter
  • For The Cinnamon Whipped Cream
  • ½ Cup Heavy Whipping Cream
  • ¼ Cup Powdered Sugar
  • ¼ Tsp Cinnamon
Instructions
  1. For The Blondie Crust
  2. Grease a 9 inch cake pan. Preheat oven to 350 degrees F.
  3. In a large bowl mix melted butter and brown sugar. Stir in vanilla,eggs,cinnamon, apple pie spice,salt, baking powder, and baking soda.
  4. Gradually stir in flour, stirring until just combined. Stir in apples.
  5. Pour blondie batter into pan, and bake for 30-35 minutes. Cool.
  6. For The Caramel Sauce
  7. In a small sauce pan melt butter. Whisk in brown sugar and heavy cream, stirring constantly until fully dissoved.
  8. Bring to a boil and boil for 3 minutes.
  9. For the Cheesecake
  10. Mix cream cheese and sugars together until smooth.
  11. Stir in apple pie spice, ¾ cup of caramel sauce, and cool whip.
  12. Evenly spread cheesecake over the blondie. Refrigerate around 3-4 hours or until firm.
  13. For The Cinnamon Apples
  14. In a medium sauce pan combine brown sugar, lemon juice, and cinnamon. Add apples and toss to coat.
  15. Add butter and cook for 15-20 minutes or until soft. Cool and then place on top of the cheesecake.
  16. For The Cinnamon Whipped Cream
  17. Freeze a metal bowl. Whip heavy whipping cream until stiff peaks form. Fold in powdered sugar, and cinnamon.
  18. Pipe around edges of cheesecake.
  19. Drizzle remaining caramel sauce over the top of the cheesecake.

This recipe features amazing flavors. Rich brown sugar, spicy cinnamon, and tart apples.  It reminds me a lot of my caramel apple cheesecake. Except, there’s also a great contrast between the smooth creamy cheesecake, and the crunchy topping.

Ingredients
  • For the Crust Graham/Oats Crust:
  • ¼ Cup Brown Sugar, Packed
  • 1 Cup Graham Cracker Crumbs (~14 Whole Graham Crackers)
  • ¾ Cup Rolled Oats
  • ½ Cup Butter, Melted
  • For the Caramel Apple Crisp Cheesecake
  • (2) 8 Ounce Packages Cream Cheese, Softened
  • 2 Tablespoons Corn Starch
  • ¼ Cup Brown Sugar, Packed
  • ¼ Cup White Sugar
  • 2 Teaspoons Vanilla Extract
  • 1 Teaspoon Cinnamon
  • For the Caramel Apple Crisp Cheesecake Topping
  • ¼ Cup All Purpose Flour
  • ¼ Cup Rolled Oats
  • ¼ Cup Brown Sugar
  • ½ Teaspoon Cinnamon
  • 2 Tablespoons Butter
  • 2 Granny Smith Apples, Peeled & Sliced
  • Caramel Sauce, If Desired
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl combine graham cracker crumbs, oats, butter, and brown sugar. Press into a 10 inch springform pan.
  3. Bake for 5 minutes. Cool.
  4. In a large bowl, combine cream cheese, brown sugar, white sugar, cinnamon, cornstarch, and vanilla until smooth.
  5. Evenly pour into prepared crust. Top with sliced apples.
  6. In a small bowl combine flour, oats, brown sugar, cinnamon, and butter. Evenly pour over sliced apples.
  7. Bake for 40-50 minutes. Cool completely then refrigerate.
  8. Top with caramel sauce before serving if desired.

Caramel Apple Crisp Cheesecake Tips:

  1.  Use rolled oats (NOT instant). They’ll give you more texture.
  2. Easily crush graham crackers by placing them into a plastic baggie, and rolling with a rolling pin.

Once upon a time…

 

There was a dashing young cannoli who met a lovely cheesecake gal. The result is this decadently delicious recipe. 

 

It takes everything you love about the desserts and combines them. You have a classic graham cracker crust filled with creamy ricotta/mascarpone filling. Then it’s topped with sweetened whipped cream and chocolate chips!

Cannoli Cheesecake: Rich and creamy Italian cheesecake topped with plenty of chocolate chips. Your favorite Italian dessert in cheesecake
Ingredients
  • For the Cannoli Cheesecake Crust
  • 2¼ Cups (About 16 Graham Crackers)
  • ½ Cup Butter, Melted
  • 3 Tablespoons White Sugar
  • For the Cannoli Cheesecake Filling
  • 20 Ounces Ricotta Cheese
  • 12 Ounces Mascarpone Cheese
  • 1 Cup White Sugar
  • 3 Tablespoons All Purpose Flour
  • 1 Teaspoon Cinnamon, Ground
  • 1 Tablespoon Vanilla Extract
  • 4 Eggs
  • For The Whipped Cream
  • ½ Cup Heavy Cream
  • 5 Tablespoons Powdered Sugar
  • 3 Tablespoons Ricotta Cheese
  • 1 Teaspoon Vanilla Extract
  • Mini Chocolate Chips/Powdered Sugar for Garnish, If Desired
Instructions
  1. For the Cannoli Cheesecake Crust
  2. Preheat oven to 325 degrees F. Line a 9 inch spring form pan with parchment paper. Spray sides with non stick cooking spray.
  3. In a medium bowl, mix graham crumbs, melted butter, and sugar until well combined. Press into the bottom of prepared pan.
  4. Bake for 10 minutes. Wrap pan in aluminum foil (we used a double layer).
  5. For the Cannoli Cheesecake Filling
  6. Reduce oven temperature to 300 degrees F.
  7. In a large bowl, combine ricotta cheese, mascarpone cheese, sugar, and flour until smooth and creamy. Stir in cinnamon, and vanilla extract.
  8. Add in eggs one at a time, until just combined. Do not over mix.
  9. Evenly spread batter into crust.
  10. Place spring form pan inside a large roaster filled with warm water. Water should only go about halfway up the pan.
  11. Bake for 105-115 minutes or until the edges are set. Turn off the oven, and leave cheesecake sit in oven for 30 minutes.
  12. Crack open over door, and leave cheesecake sit for another 30 minutes.
  13. Cool completely.
  14. For the Whipped Cream
  15. In a large chilled bowl, use a chilled whisk to whip heavy cream, powdered sugar, ricotta cheese, and vanilla until stiff peaks form.
  16. Evenly spread whipped cream over cheesecake. Top with mini chocolate chips and powdered sugar if desired.
  17. Store in the refrigerator.

  1. Don’t be tempted to skip the water bath, or leaving the cheesecake in the oven. These steps will help your cheesecake cook evenly, and prevent cracking. 
  2. I’ve also made this cheesecake topped with pistachios. They add great salt/crunch.

  1. Sleeping in on a weekend morning. YAWN SNOOZE so cozy right?!. Improvement: A handsome man to take the dogs out so they don’t disturb my beauty rest at 7 A.M.
  2. Relaxing at the beach with a good book. Ahhh. Improvement: Quiet kid free beach, #sorrynotsorry.
  3. Sipping hot chocolate on a cold winter’s night. Improvement: Cookies the answer is always cookies.

 

Think there’s no way to improve upon red velvet cake? Think again!! Try my red velvet oreo cheesecake. It starts with a basic oreo cookie crust. The oreo crust is then topped with a decadent layer of smooth, rich red velvet cheesecake. Ahh, you thought I was going to forget the cream cheese frosting there didn’t you? Tsk tsk! Think again! It is then  topped with a cream cheese whipped cream!

  • For the Oreo Cookie Crust
  • 2 Cups Oreo Crumbs (About 20 Oreos)
  • 4 Tablespoons Butter, Melted
  • For the Red Velvet Oreo Cheesecake filling
  • (3) 8 Ounce Bricks Cream Cheese, Softened
  • 1 Cup White Sugar
  • 3 Tablespoons Cocoa Powder
  • 4 Eggs
  • 1 Cup Sour Cream
  • ¼ Cup Buttermilk
  • 2 Teaspoons White Vinegar
  • 1 Teaspoon Vanilla
  • Red Food Coloring
  • For the Cream Cheese Whipped Cream
  • ¾ Cup Heavy Whipping Cream
  • ¼ Cup Powdered Sugar
  • ½ Cup Canned Whipped Cream Cheese Frosting
Instructions
  1. For the Oreo Cookie Crust
  2. Heat oven to 325 degrees F.
  3. In a small bowl, combine oreos and butter. Press into the bottom of a 9 inch greased springform pan.
  4. Bake for 10 minutes.
  5. Cover outside of pan with 2 layers of aluminum foil.
  6. For the Red Velvet Cheesecake
  7. Reduce oven heat to 300 degrees F.
  8. In a large bowl, combine cream cheese, sugar, and cocoa powder.
  9. Add eggs, sour cream, buttermilk, vinegar, vanilla, and red food coloring.
  10. Pour into pan. Pound on counter a few times.
  11. Place springform pan inside another pan filled halfway with lukewarm water. (I used a roasting pan.)
  12. Bake for 1 hour 45 minutes.
  13. Turn heat off and leave cheesecake in the oven for around 30 minutes.
  14. Crack open the oven door, and leave cheesecake in the oven for another 30 minutes.
  15. For the Cream Cheese Whipped Cream
  16. Whip cream in a chilled bowl until it starts to show soft peaks. Stir in powdered sugar.
  17. Continue whipping until stiff peaks form. Fold in cream cheese icing.
  18. Spread or pipe onto cheesecake.

Red Velvet Oreo Cheesecake Shopping Tips:

  1. Use a premade oreo crust to speedy up the recipe.
  2. I used Duncan Hines Whipped Cream Cheese frosting (the kind in the can). I usually hate store bought frosting, but it lends the perfect flavor/texture here!

Red Velvet Oreo Cheesecake Tips For Success:

  1. Don’t skip the water bath. I know its annoying especially if you’re a uncoordinated klutz like me. But, it really helps the cheesecake cook slowly.
  2. Don’t over bake your cheesecake! It is okay if there is a small spot in the center that is not set. It will firm up as the cheesecake cools.

I can’t really think of an argument against making these Apple Pie Cupcakes! They taste like apple pie in cupcake form! I made the cupcakes and apple pie filling from scratch. However, if you’re short on time (Or pans!), feel free to use shortcuts.

Apple Pie Cupcakes
Ingredients
  • For the Apple Pie Cupcakes
  • 1 Cup Milk
  • ½ Cup Butter, Softened
  • 2 Cups All Purpose Flour
  • 1½ Teaspoons Baking Powder
  • 2 Teaspoons Ground Cinnamon
  • 4 Large Eggs
  • 1¾ Cups White Sugar
  • 1 Teaspoon Vanilla
  • For the Apple Pie Filling
  • 2 Tablespoons Butter
  • 4 Medium Apples (I used Granny Smith), Peeled, Cored, and Diced
  • 2 Tablespoons White Sugar
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon Lemon Juice, Freshly Squeezed
  • ¼ Teaspoon Ground Cinnamon
  • ½ Tablespoon Cornstarch
  • 1 Tablespoon Water
  • For the Frosting
  • 4 Sticks Butter, Softened
  • 1 Tablespoon Vanilla Extract
  • 6-8 Cups Powdered Sugar
  • 5-6 Tablespoons Whole Milk
  • Pinch of Salt, To Taste
  • Caramel Sauce, If Desired
Instructions
  1. For the Apple Pie Cupcakes
  2. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
  3. In a large bowl cream butter and sugar until light and fluffy. Stir in milk, eggs, cinnamon, baking powder, and vanilla.
  4. Gradually add flour a little at a time until just combined. Do not over mix.
  5. Divide batter evenly between cupcake liners. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 5 minutes before removing to wire racks to cool completely.
  6. Once cool, cut a small circle out of the center of each cupcake.
  7. For The Apple Pie Filling
  8. In a medium saucepan melt butter over medium low heat.
  9. Add apples, sugars, lemon juice, and cinnamon. Cook for 10-12 minutes or until apples are tender.
  10. Stir in water and cornstarch, and cook until thickened.
  11. Add ~1/2 tablespoon of apple pie filling to each cupcake. Replace cupcake "lid" that you cut out earlier.
  12. For the Vanilla Buttercream
  13. Cream butter until light and fluffy. Stir in vanilla and salt.
  14. Gradually add powdered sugar a little at a time. Alternate with milk until you reach your desired consistency.
  15. Spread or pipe onto cupcakes. Drizzle with caramel sauce if desired.

  • 1½ Cups Pecans, Roughly Chopped
  • 3 Eggs
  • 1 Jar Caramel Ice Cream Topping
  • Additional Caramel/Pecans, For Garnish If Desired
Instructions
  1. Preheat oven to 350 degrees F. Fill a 9x13 pan halfway with water. Place on bottom rack of oven.
  2. For the Crust
  3. Crush graham crackers in a baggie using a rolling pin. Finely chop pecans. In a small bowl combine graham cracker crumbs, pecans, brown sugar, and melted butter.
  4. Press into a spring form pan. Bake for 5 minutes.
  5. For the Pecan Pie Cheesecake
  6. Whip cream cheese until smooth and creamy. Stir in sour cream, brown sugar, and vanilla until combined. Add eggs one at a time. Pour into spring form pan.
  7. For the topping
  8. Evenly sprinkle the pecans over the top of the cheesecake.
  9. In a large bowl whisk eggs and caramel sauce until combined. Pour over pecans.
  10. Place springform pan on top of a foil lined cookie sheet and bake for 60-70 minutes or until the center is just set.
  11. Turn the oven off, and open the oven door just a crack. Let the cheesecake rest for 1-2 hours.
  12. Remove from oven, and cool until the cheesecake is room temperature. Store in the refrigerator.
  13. Top with additional pecans and caramel when serving is desired.
